CABBAGE, ANYONE?

Who knew that cabbage would become the latest culinary craze.  Read Kim Everson of the New York Times:  The Coolest Menu Item at the Moment is...Cabbage?

  • China grows the most.
  • Russia eats the most.
  • Hot item menu now with anchovy and breadcrumbs or pancake.
  • Of course, we've always had it in coleslaw and sauerkraut, but cabbage consumption in the U.S. dropped from 9 pounds/person/year in 2000 to now only 6 pounds/per/year.

Turns out that there are impressive health benefits from cabbage.

  • One cup only has 22 calories, but will provide 56% Vitamin K, 36% of Vitamin C, and also good for folate, manganese, B6, calcium, potassium and magnesium.
  • High in fiber with powerful antioxidants, including polyphenols.
  • Keeps inflammation in check.
  • Improves digestion.
  • Keeps your heart healthy.
  • Lowers blood pressure.
  • Helps lower cholesterol levels.
  • Can be eaten raw, cooked or fermented, as in sauerkraut an kim chi.
  • Plus it is relatively cheap.
There is also a cabbage soup diet.
  • Is a low fat and high fiber soup.
  • Should be followed only for a week, not long term.
  • Consists of cabbage, other vegetables, fruits and skimmed milk.
  • Day 1: cabbage soup and raw fruit, but no bananas
  • Day 2: cabbage soup and leafy green vegetables, raw or cooked, but no potatoes
  • Day 3: cabbage soup and as many fruits and vegetables as you can eat, but no potatoes or bananas
  • Day 4: cabbage soup, skimmed milk, and as many as 8 bananas
  • Day 5: cabbage soup, 280-565g lean beef or chicken (skinless) and tomatoes (up to six)
  • Day 6: cabbage soup, unlimited beef and green leafy vegetables
  • Day 7: cabbage soup, brown rice, unsweetened fruit juice
  • Advocates say you can lose 10 pounds in one week.  But this article is dubious, citing that bloating and flatulence could occur.
  • More details.

Diabetics and anyone with a blood sugar management issue should discuss the potential implications with their GP and healthcare team before embarking on such a regime. Similarly, anyone who meets one or more of these criteria:  is under 18 years old or elderly, has a pre-existing medical condition, including heart disease, are pregnant or breastfeeding, has or are recovering from an eating disorder or are on prescribed medication.  Of course: if you're considering attempting any form of diet, please consult your GP first to ensure you can do so without risk to your health.

I now and then check to see what is the largest ever grown.  The current record was set at the Alaska State Fair on 31August2012 at 138.25 pounds by Scott Robb.  Why in Alaska?  Summer days can receive as many as 20 hours of sunlight/day, allowing the cabbages to grow longer.

I've long been a big fan of cabbage, from tsukemono to balancing pork tonkatsu to a local favorite, kalua pig and cabbage.  Here are some of my meals featuring cabbage.

Tsukemono.
For chicken and pork tonkatsu.

By the way, the largest pumpkin ever grown weighed in at 2749 pounds, by Travis Gienger in 2023 in Nowthen, Minnesota.  Read his story.  You would think that someone in Alaska might want to make an attempt.

I close today with some dazzling dark sky photos of the year from Gan Jing World.  I will tomorrow describe this organization.  They gather info and share them, these graphics are DarkSky winning photographs.

HOW TO WATCH NETFLIX SHOWS

But first, maybe  President Donald Trump's 20-point Gaza Peace Plan is showing some progress .   No one expects the Hamas to accept all of them, but they did agree to release all captives and the act of handing over administration to Palestinian technocrats. So far, in the Gaza Strip, 66,288 have been killed and 169,165 wounded.   On 7October2023, almost two years ago, 1139 were killed in the initial Hamas-led attack. About my topic of the day, I've long been lamenting the overflow of watchable films and series available on Netflix and Prime.  Why expand into the plethora of other streaming options when I can't keep up with what I have, which costs me around $30/month.  And, of course, why venture out to a movie theater to end up watching a film that will cost me around that amount of money, when you add the popcorn, drink, gasoline cost, time it takes to get there and back, and the risk of a car accident or worse.  Oh, also getting infected with ...
